Beef, Bean & Barley Chili (P1)

Ingredients
- 1 lb lean ground beef (or turkey/bison)
- 2 c cooked barley
- 1 can (15 oz?) black beans (drained & rinsed)
- 1 c diced tomatoes
- 1 TB Chili Powder
- 2 tsp cumin
- Sea salt (to taste)
- 1 small onion (chopped)
- 2 garlic cloves (minced)
- 2 c organic beef broth

Preparation
Step 1
Saute onions & garlic in large, non stick pot with a little of the beef broth. Add chili powder, cumin & sea salt. Cook with ground beef until meat is cooked through. (about 5 min). Add canned tomatoes & beef broth. Bring to boil and simmer for 1 hr to let flavors intensify. Add beans and barley. Simmer for another hour. If it doesn't reduce enough you can add some tomato paste to thicken.
Makes 6 servings (1 c = a serving)
