Ingredients

  • 1/4 lrg sweet potato, mashed
  • 1/2 c oat flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tbsp Xylitol or Stevia
  • 1/4 c unsweetened almond/coconut milk
  • 1 egg, slightly beaten
  • Fresh or frozen blueberries
  • Coconut oil to grease skillet

Preparation

Step 1




Grease a large skillet over medium high heat.

Combine all ingredients except blueberries, mixing JUST UNTIL COMBINED. Allow to sit for about 10 min for oat flour to absorb some of the liquid. Stir in blueberries and drop by quarter cups onto hot skillet. Cook for about two minutes each side then serve with warm.

Makes 4 medium pancakes: 2 servings
