Ingredients
- 3 lbs pork shoulder loin
- 1 tsp each salt, pepper , sugar
- 2 eggs, beaten
- 2 tbsp dry sherry
- 2 cups flour
- frying oil
- SAUCE
- 6 cloves garlic
- 1/2 tsp salt
- 1/2 cup water
- 1 cup red wine
- 3 cups sugar
- 1 tbsp oil
- 1/2 cup chili sauce Asian
- Cornstarch and water mixture

Step 1
Trim fat and cut pork into 1 1/2 inch strips, then slice each pork strip thin, soak in 3 cups of water and 6 tsp baking soda solution overnight. Rinse and dry. Marinate pork with salt, pepper, sugar and dry cherry 10 minutes.
Pour the beaten eggs in bowl and mix thoroughly with flour, pork from marinade, then egg, then flour.
Deep fry in 375* oil until brown. Place on platter to serve with spicy sauce
Spicy sauce
Brown chopped garlic in sauce pan with oil and salt, add water, vinegar, sugar and chili sauce. Mix well and boil for 20 minutes or until thickened. Spoon on top of the platters of cantonese pork..
