Ingredients
- 1 red pepper, sliced
- 1 carrot, sliced
- 1 zucchini, sliced
- 4 oz snow peas
- 8 oz farfelle pasta
- 4 large plum tomatoes, chopped
- 1 c basil, chopped
- 2 green onions, chopped
- 2 T parsley, chopped
- 1 T lemon zest

Preparation
Step 1
1) Blanch carrots and peppers for 30 sec in boiling water. Add zucchini and peas. Cook 1 min. Drain.
2) Cook pasta.
3) Saute tomatoes. Toss with pasta, add vegetables, green onion, basil, parsley, and lemon zest.
