Secret Chocolate Cake

Ingredients

• 2 c beets, boiled and chopped
• 1/2 c applesauce
• 1 1/2 c sugar
• 1/2 c oil
• 1/2 c plain yogurt
• 3 eggs
• 1 1/2 t vanilla
• 2 1/2 c whole wheat flour
• 1/2 c cocoa
• 1 1/2 t baking soda
• 1/2 t salt
• 1 c chocolate chips
• chocolate icing

Preparation

Step 1

1) Puree beets and applesauce.

2) Beat together beets, sugar, oil, yogurt, eggs, and vanilla for 2 min.

3) Stir in flour, cocoa, baking soda, and salt till just blended.

4) Sprinkle chocolate chips in the bottom of 2 round pans. Pour 1/2 of batter in each and bake 45 min. at 350 degrees.

5) Cool and ice. Sprinkle extra chocolate chips on top of cake once iced if desired.
