Ingredients

  • 12 oz green beans
  • 2 t Dijon mustard
  • 2 T lemon juice, fresh squeezed
  • 1 T extra virgin olive oil (or your favorite oil)
  • 1 T shallot, minced
  • 1/4 t fresh cracked black pepper
  • 1 T parsley, minced
  • Optional: slivered almonds, chopped walnuts, a teeny pinch of good sea salt

Preparation

Step 1

Steam the green beans for about 6-8 minutes, just until they reach that delicious crispy yet tender point.

While the beans steam, combine the rest of the ingredients in a small bowl.

Drain the beans and place them in a pretty bowl. Toss with the sauce and serve immediately.

Or prepare the beans and mix with the sauce early in the day, and take them to a picnic. The beans are just as delicious cold.
