Ingredients
- 2 tbsp evoo
- 1 onion diced
- 1 green bell pepper diced
- 1 red bell pepper diced
- 1 tbsp minced garlic
- 2 1/2 tbsp chili powder
- 1 tbsp cumin
- 1 can 28 oz. peeled, crushed tomatoes with juice
- 2 tsp thyme
- 1 can 15.5 oz black beans
- 1 c cooked corn
- 1 large bunch fresh spinach, chopped
- salt and pepper to taste
- 2 tbsp lemon juice
- 4 scallions thinly sliced

Preparation
Step 1
saute onion and peppers in evoo in large heavy pot over low heat. cook, stirring occasionally for 10-12 minutes or until vegetables are sort. add garlic; cook 2 minutes. addchili powder and cumin; cook stirring for 1 minute. add tomatoes and thyme; simmer over medium heat for 10 minutes. add black beans and corn; cook stirring occassionally for 10 minutes. remove from heat. add spinach and stir until it is well combined and wilted. season with salt and pepper and stir in lemon juice. serve over rice, and sprinkle with scallions.
