  • 1 CUP STRONG COFFEE COOLED
  • 1/2 CUP SUGAR
  • 2 TABLESPOONS CONGAC OR BRANDY
  • 8 OUNCES MASCARPONE
  • 2 TABLESPOONS COCOA
  • 10 LADYFINGERS

Step 1

1. COMBINE EGG YOLKS, 1 TABLESPOON COFFE, SUGAR AND COGNAC INTO LARGE BOWL. BEAT 2 TO 3 MINUTES

2. ADD MASCARPONE AND BEAT 3-5 MINUTES UNTIL SMOOTH.

3. IN ANOTHER BOWL, COMBINE 3 EGG WHITES AND A PINCH OF SUGAR. BEAT UNTIL STIFF PEAKS FORM.

4. GENTLY FOLD IN MASCARPONE MIXTURE. ( IF USING EGG SUBSTITUE BEAT INTIL FLUFFY).

5. QUICKLY DIP EACH LADYFINGER INTO REMAINING COFFEE AND LAYER ON BOTTOM OF SMALL SERVING DISH.

6. SPREAD MASCARPONE MIXTURE AND SPRINKLE WITH COCOA.

REFRIGERATE AT LEAST 3 HOURS BEFORE SERVING. BEST OVERNIGHT.
