Polynesian Dinner

This is a very good recipe and fun to fix for larger groups of people. It was given to me by an old friend from seminary days, Sherry Kilpatrick. Sherry married Glen Warner (they later divorced).

Ingredients
- 2 packages Chinese noodles
- 2 packages minute rice
- Chicken gravy
- 2 packages frozen green peas
- 1 bunch chopped onions
- 1 bunch celery, chopped fine
- 1 package cheddar cheese
- 1 large can crushed pineapple
- sliced almonds
- Shredded coconut
- Tomato wedges

Preparation
Step 1
To make Chicken: Cook two stewing chickens. Remove from bones, cut in small pieces. Add cooking juice. Use either cream of chicken soup or flour to thicken. Add onion salt,
salt, pepper, bay leaf. Simmer 45 minutes-1 hour or longer. You want the texture to be very thick and “chickeny” (not thin or runny)
You serve by placing each item (noted above) in the order given. Guests then layer them all on a plate.
