Chicken - Sweet and Sour

Ingredients
- 1 – 8 oz can unsweetened pineapple chunks in juice
- 1 lb boneless skinless chicken breast
- 1 can swansons chicken broth
- ¼ c vinegar
- ¼ c brown sugar or 5 – 6 packets Equal (if using Equal add after mixture is thickened with cornstarch)
- 2 tsp soy sauce
- ½ tsp chopped garlic
- 1 c sliced celery
- 1 small onion quartered
- 1 green pepper sliced
- 3 TB cornstarch
- ¼ c water

Preparation
Step 1
Drain pineapple. Reserve juice. Cut chicken in bite size pieces and put in saucepan. Add reserved juice, broth, vinegar, brown sugar, soy sauce and garlic.
Cover and simmer over low heat 15 minutes.
Add veggies and pineapple and cook 10 minutes stirring occasionally.
Combine cornstarch and water. Gradually stir into hot mixture. Cook until thickened, stirring constantly. Serve over brown rice or noodles.
