Ingredients

  • 2 ripe medium plantains, peeled and coarsely chopped
  • 1 apple, peeled, cored and chopped
  • 2 tbsp. packed brown sugar
  • 1/2 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 2 tbsp. water or apple juice
  • 1 tbsp. butter or margarine

Preparation

Step 1



1. Preheat grill to medium direct heat. Coat grill rack with nonstick cooking spray, or rub with vegetable oil

2. Combine plantains, apple, brown sugar, cinnamon, and nutmeg in a medium bowl. Toss to mix

3. Place mixture on a 18x12 piece of heavy-duty foil. Sprinkle with water and dot with butter. Bring the edges of the foil together to enclose the fruit. Fold and crimp edges to seal

4. Place the foil package on the grill and grill, covered, for about 6-10 minutes or until fruit is tender. Remove from heat.

5. Serve over ice cream
