  • ½ cup butter
  • 1 cup flour
  • ¼ cup icing sugar
  • 2 tbs. flour
  • ½ tsp. baking powder
  • 1 cup sugar
  • 2 tbs. lemon juice
  • 2 eggs, beaten
  • 3 tsp. grated lemon rind

Preparation

Step 1

Cream butter with icing sugar and add the flour. Mix well and spread onto a lightly greased oblong baking pan. Bake at 350 degrees for 15 minutes. Mix 2 tablespoons flour with sugar and baking powder. Add lemon juice, rind and beaten eggs. Pour the mix on top of the baked crust and bake an additional 25 minutes. Cut into squares when completely cooled.
