Ingredients
- 2 ears corn
- 1 tbsp margarine
- 1 jalapeno thinly sliced
- pinch black pepper
- 1 tsp salt
- 1/2 tsp pepper
- 3 c large tomatoes, sliced
- 2 avocado peeled and sliced
- 1 tbsp. minced cilantro
- 2 tbsp. red wine vinegar
- 1 tbsp evoo
- garnish with basil leaves

Step 1
shuck corn and cut off the cob. drizzle corn with margarine and season with salt and pepper.grill on medium-high heat for 3-5 minutes until charred on all sides.when cool, remove corn kernels with a sharp knife. in mixing bow, add red wine vinegar, cilantro and evoo.season with salt and pepper and whisk to combine. arrange tomatoes on large serving platter. sprinkle with salt and pepper top with avocado slices and jalapeno slices. drizzle 1/2 dressing over tomatoes and avocados. top with grilled corn and drizzle remaining dressing over the top. serve immediately. garnish with basil leaves.
