Ingredients
- 1 lb. ground beef, lean or extra lean
- 1/2 cup milk - 1 %
- 1/2 cup dry breadcrumbs
- 1 tbsp. chopped dried parsley
- sea salt and freshly ground black pepper
- 1 tbsp. EVOO
- 1 tbsp. butter or becel buttery taste
- 1/2 medium onion, finely chopped
- 4 ounces sliced mushrooms - cremini or white
- 1/2 tsp. smoked spanish paprika
- 2 tbsp. flour
- 1 can consome - no water
- 1/3 cup sour cream - 5%
- 1 tsp. worchestershire

Preparation
Step 1
* *Combine* first 6 ingredients, *blend* well and shape into 1" balls.
* *Heat* olive oil and butter and *brown* balls on all sides. *Remove* and set aside.
* *Add* onions and mushrooms and *saute*. *Stir in* flour and paprika and *cook* roux until thickened.
* *Gradually* add consome, *stirring* until smooth and thickened.
* *Stir* in sour cream and worchestershire and *mix* well.
* *Return* meatballs to the pan and *heat* thoroughly, without boiling.
* *Serve* over noodles.
