Ingredients
- 2 medium papayas, peeled, seeded
- and chopped
- 1 can lite coconut milk
- 3 tablespoons fresh mint, chopped
- 2 teaspoons honey
- 1 lime, zested and juiced
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon allspice
- 1/4 teaspoon ground ginger
- Mint, for garnish

Preparation
Step 1
Place all ingredients in a food processor or blender and puree for 1 minute or until smooth.
Refrigerate soup for 1 hour to chill. To serve, pour cold soup into individual bowls and garnish with mint sprigs.
