Ingredients

  • 4 orange roughy fillets (appx 1 12 lbs.)
  • 1 cup medium white wine
  • 1/4 cup all purpose flour
  • salt & pepper
  • 1 Tbs. butter
  • 1 onion, finely chopped
  • 1 tsp capers (optional)

Preparation

Step 1

Marinate fish in wine in refrigerator for 15-60 minutes. Drain fish and reserve wine. Rinse and pat fish dry. Coat with flour seasoned with salt and pepper. Heat butter and gently cook onion until translucen (about 3-5 minutes). Add fillets to pan and fry each side for 2 minutes. Add wine and capers and cook over high heat until fish is opaque in center. Cut to test about 2-3 minutes.
