  • 3 cups flour
  • 1 tsp. salt
  • 1 1/4 cup shortening
  • 1 small egg, beaten
  • 1/3 cup ice water
  • 1 tablespoon vinegar

Step 1

Mix the four and salt. Cut in shortening (and butter) with a pastry blender.

Add egg, ice water, and vinegar to flour mixture and fold back and forth using a piece of parchment paper until a ball forms.

Let ball chill for at least an hour before rolling out.

Makes two crusts.

If making a pie with just a bottom crust, bake the crust at 475 degrees for 12 to 15 minutes. Cool before filling.

HELPFUL TIPS:

** Instead of using just shortening, a combination of shortening and butter will provide better flavor.

** Chill the pastry blender before using. It is better than using your fingers as the warmth from your fingers breaks down the shortening.

** Use parchment paper to fold the dough over onto itself instead of using your hands. Again, keep the dough as cold as possible.

** After rolling out and placing in pie plate, chill again for 15 minutes
