Ingredients

  • 1 lb. Boneless, Skinless Chicken, thawed and cut into small cubes
  • 1 Tbsp vegetable oil
  • 15 oz. can tomato sauce
  • 1 1/2 cups corn, cooked
  • 1 1/2 tsp. chili powder
  • 1 tsp. onion powder
  • 12 oz. pkg. Shredded Cheddar Cheese
  • Tortilla Chips

Step 1

Heat the oil in a large skillet over MEDIUM-HIGH heat. Add the chicken to the skillet and cook the chicken for 15 minutes, stirring frequently. Add the tomato sauce, corn, chili powder, and onion powder; Bring the mixture to a boil. Reduce the heat to MEDIUM-LOW and simmer for 10 minutes, stirring occasionally. To serve, place the desired amount of tortilla chips on a plate. Spoon the ground beef mixture over tortilla chips and sprinkle shredded cheese over the top.
