Chicken Fried Steak

This recipe was originally given to me by a great family friend, Natalie. She was a "mother-like" figure who shared some of her favorite recipes with our family.

Ingredients
- 4 - 6 oz. cube steak OR round steak, cut 1/4" - 1/2" thick
- 1 - 2 cups Buttermilk
- 1 1/2 - 2 cups + 1/2 Tbsp all-purpose flour
- 1/4 tsp. onion powder
- 1/4 tsp. garlic powder
- 1/2 cup milk
- Salt
- Pepper
- Vegetable Oil

Step 1
Heat a heavy skillet over MEDIUM-HIGH heat. Add 1/4" - 1/2" vegetable oil to the skillet. Season the steak with garlic powder, onion powder, salt to taste, and pepper to taste. Place 1 1/2 - 2 cups of flour in a shallow glass dish and dredge the steak through the flour. Add 1 - 2 cups of buttermilk to a shallow glass dish and dip the floured steak into the buttermilk. *Allow the excess buttermilk to drip from the steak so that it isn't dripping as you place the steak back into the flour again. Dredge the steak through the flour for a second time. Brown the steak on both sides in the skillet. Cover the skillet and reduce the heat to LOW; Continue to cook the steak for 10 minutes. Remove the lid from the skillet, turn the steak over and continue to cook the steak for an additional 10 minutes. Drain the steak on a paper towel lined plate. Discard all the the drippings in the skillet *EXCEPT* for 1 Tbsp of oil. Add flour to the skillet and stir to make a gravy from the drippings. After 2 minutes, add the milk, salt to taste, and pepper to taste. Stir the gravy with a whisk to thicken the sauce to a gravy consistency. Serve the steak and gravy with mashed potatoes and a vegetable.
