Ingredients
- 1 head of cauliflower
- 3 tablespoons of butter
- 1/2 teaspoon minced garlic
- 1 1/2 tablespoon light cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
- 1/2 teaspoon chives

Preparation
Step 1
1)Clean and cut cauliflower into little pieces.
2)Boil the cauliflower in a large pot of water until the cauliflower is good and soft. At least 10 minutes, but I cook mine for longer.
3)Drain well and then put the cauliflower into a food processor. (If you don't have a food processor, you can use a blender but make sure to cut it up even smaller or mash it pretty good before you put it in the blender)
4)Puree the cauliflower with the Parmesan, cream cheese, garlic, salt and pepper until almost smooth.
5)Add chives on top just before serving.
