  • ½ cup cocoa
  • ¼ cup sugar
  • ¼ cup strong coffee
  • 3 cups sifted cake flour
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • ¾ cup butter, at room temperature
  • 1 ¾ cups sugar
  • 1 ½ tsp. vanilla
  • 4 eggs
  • 1 2/3 cups buttermilk, at room temperature
  • Zest of 1 orange

Preheat the oven to 350 degrees. Great a 9 inch tube pan. Mix the cocoa and ¼ cup sugar. Add the coffee slowly and stir until well blended. Sift together flour, baking powder, baking soda, and salt. Beat butter until creamy; slowly add 1 ¾ cups sugar and vanilla. Beat until fluffy. Add eggs one at a time, beating well after each addition. Add the dry ingredients, alternately with milk, beat just until smooth and blended. Remove 1/3 of the mixture and add the cocoa to the mix. Stir in the zest. Place 1/3 of the white batter, then add the cocoa mix and top with remaining white batter. Cut through with a knife and bake for 55 – 60 minutes.
