Ingredients

  • 1/2 cup short or medium grain rice
  • 4 tbsp butter (1/2 stick)
  • 1 cup water
  • 1/2 tsp salt
  • 4 cups milk
  • 3/4 cups sugar
  • 2 eggs beaten
  • 1/2 cup heavy cream
  • 2 tsp vanilla extract

Step 1

1. In a saucepan combine rice, butter, water and salt. Bring to a boil, lower heat to minimum and cover and then simmer until all the water has been absorbed. (Use a high saucepan to prevent the likely boil over in step 2).

2. Pour in the milk and bring to a boil. Turn the heat to the lowest setting and simmer stirring often for 25 minutes or until the rice is tender.

3. Beat the sugar and eggs together. Stir into the cooked rice stirring constantly until the egg mixture is set. Remove from the heat and blend in the cream and vanilla.

4. Spoon into a serving bowl and cool. Refrigerate until serving time. Optionally top with Cinnamon.

Tip: Try using brown sugar for a different taste!
