Ingredients

  • 1.5 quarts vanilla ice cream,homemade or store bought
  • 1 29 oz can of peach halves,drained
  • MELBA SAUCE
  • 1 16 oz bag frozen strawberries ,thawed and pureed
  • 1/4 cup raspberry or strawberry jam
  • 2 tsp cornstarch,dissolved in 2 Tbs water
  • 1 Tbs vanilla sugar
  • 3 Tbs sugar
  • dash of brandy or almond extract
  • candied almonds,for garnish

Preparation

Step 1

Combine pureed berries and jam in a saucepan over low heat until melted. Add cornstarch and water and stir until mixture begins to thicken. Add sugars and brandy or extract.
To assemble: Place a scoop of ice cream in a martini glass or dessert cup. Place a peach half on top or on the side. Drizzle with Melba sauce. Garnish as desired with candied almonds.
