Ingredients
- 2 tbs. butter
- 2 cups chopped cooked chicken
- 1 tsp. dried oregano
- ½ tsp. salt
- 1/8 tsp. ground pepper
- Vegetable oil
- 6 large corn tortillas (6 inches in diameter)
- 8 tbs. chopped tomato
- 8 tbs. thinly sliced green onions
- 4 tbs. chopped green pepper
- 8 tbs. pizza sauce
- 1 cup shredded Cheddar or Mozzarella cheese
- Chile peppers, if desired

Step 1
Heat oven to 375 degrees. Melt butter over medium heat; add chicken, oregano, salt, and pepper. Cook until golden, 3 – 5 minutes. Remove chicken from skillet.
Pour oil into the skillet until ¼ inch. Cook the tortilla until crisp, about 1 minute. Remove tortilla from skillet and drain on paper towel. Repeat to cook remaining tortillas.
Spoon ¼ of the chicken mixture evenly over each tortilla. Top each with 2 tbs. tomato, 2 tbs. onion, 1 tbsp green pepper, 2 tablespoons pizza sauce and ¼ cup cheese. Bake until the cheese melts, about 5 minutes. Garnish with Chile peppers and serve hot.
