Ingredients

  • 2 tbs. butter
  • 2 cups chopped cooked chicken
  • 1 tsp. dried oregano
  • ½ tsp. salt
  • 1/8 tsp. ground pepper
  • Vegetable oil
  • 6 large corn tortillas (6 inches in diameter)
  • 8 tbs. chopped tomato
  • 8 tbs. thinly sliced green onions
  • 4 tbs. chopped green pepper
  • 8 tbs. pizza sauce
  • 1 cup shredded Cheddar or Mozzarella cheese
  • Chile peppers, if desired

Step 1

Heat oven to 375 degrees. Melt butter over medium heat; add chicken, oregano, salt, and pepper. Cook until golden, 3 – 5 minutes. Remove chicken from skillet.

Pour oil into the skillet until ¼ inch. Cook the tortilla until crisp, about 1 minute. Remove tortilla from skillet and drain on paper towel. Repeat to cook remaining tortillas.

Spoon ¼ of the chicken mixture evenly over each tortilla. Top each with 2 tbs. tomato, 2 tbs. onion, 1 tbsp green pepper, 2 tablespoons pizza sauce and ¼ cup cheese. Bake until the cheese melts, about 5 minutes. Garnish with Chile peppers and serve hot.
