- 1 c yellowcornmeal
- 1 tsp brown sugar
- 1 tsp salt
- 2 c boiling water

Step 1
Toss cornmeal, brown sugar anad salt in a bowl.
Boil water and slowly pour into cornmeal mixture, let rest for 10 minutes.
Heat nonstick pan over medium heat.
Spread butter on pan, scoop batter into scoops about the size of a ping-pong ball.
Press down each scoop to about 1/2 inch thick.
Cook for 10 minutes over medium heat, flip and cook another 10 minutes until brown and crisp.
Serve warm with butter or syrup.
