Ingredients
- ½ cup finely chopped mushrooms
- 2 tbs. butter
- 2 tsp. flour
- ½ cup light cream
- 1 ¼ cups shredded cheddar cheese
- ¼ tsp. salt, cayenne, and pepper
- 6 chicken breasts
- Flour
- 2 eggs, slightly beaten
- ¾ cup bread crumbs

Step 1
De-bone the chicken breasts, and pound to ¼ inch thickness. Sprinkle with salt. Cook mushrooms in butter for 5 minutes. Blend in flour and stir in cream and cheese. Add salt and cayenne pepper, cook over low heat, stirring until melted. Chill until firm and cut into 6 portions. Place a cheese mix on each breast piece and roll. Dust rolls with flour, dip in egg and coat with crumbs. Chill 1 hour and fry in oil that is 350 degrees until golden.
