Ingredients
- HEAT IN SKILLET 3-4 min until limp:
- 1 tsp olive oil
- 1 red bell pepper, chopped
- 1 stalk celery, chopped
- 1 clove garlic

- STIR ALL MIXTURE INTO CROCK POT:
- 1/4 tsp salt
- 1/8 tsp pepper
- 1/8 tsp dried thyme, crushed

- ADD TO CROCK POT:
- 1 lb chicken breasts, bite sized pieces
- 1 cup chicken broth
- `
- STIR COVER COOK
- LOW
- 3 1/2 HOURS

- STIR IN & COVER, cook 15 minutes:
- 1 green onion, green only, finely chopped
- `
- Serve and sprinkle
- 1/4 cup Parmesan cheese
