Ingredients

  • 2 pounds lean, boneless chuck roast, cut in 1-inch cubes
  • 1 Tablespoon flour
  • 4 Tablespoons cooking oil
  • 1 large onion, sliced thin
  • 1 clove garlic, crushed
  • 1 ½ cups freshly squeezed orange juice (or frozen)
  • 3 tablespoons freshly squeezed lemon juice
  • ¼ cup tomato sauce
  • 2 Tbsp soy sauce
  • 1 Tbsp brown sugar
  • ½ tsp curry powder
  • 1 medium Valencia orange, cut into wedges
  • 8 ounces cashew nuts, lightly roasted
  • 1½ cups brown rice, cooked
  • 1 tablespoon minced fresh parsley

Preparation

Step 1

Dredge beef in flour.

Brown in hot oil in a large heavy skillet. Remove with slotted spoon to 3- quart casserole.
Stir sliced onion and garlic into drippings and sauté. Spoon over beef.

Mix together orange juice, lemon juice, tomato sauce, soy sauce, brown sugar and curry powder. Pour over beef mixture.

Bake, covered, at 325 degrees for 2 hours.

Stir in orange wedges and cashew nuts. Continue baking for 20 minutes. Serve' over hot cooked brown rice, garnished with parsley.
