This is a recipe that I created when I wanted to have my family eat a healthy beef fajita meal.

Ingredients

  • 2 1/2 lbs. Amana Beef Boneless Top Sirloin, cut into short strips (I find this cut at Hy-Vee)
  • 3 - 4 Tbsp olive oil
  • 1 medium red pepper, cut Julianne style
  • 1 medium green pepper, cut Julianne style
  • 1/2 red onion, sliced
  • Two 1.25 oz. pkg. Old El Paso Fajita Seasoning Mix
  • 1 cup water
  • 2 tomatoes, diced
  • Flour Tortillas
  • Salsa
  • Sour Cream

Step 1

To a large 15" skillet, add the olive oil over a MEDIUM-HIGH heat. Allow the skillet to heat up and then add the steak strips and cook until the steak in no longer pink in the middle; Drain. Stir in the Fajita Seasoning Mix and water. Add the bell peppers and onion and cook, UNcovered, over MEDIUM heat for 3 - 6 minutes, stirring occasionally until the vegetables are tender crisp. Add the steak and vegetables to a flour tortilla and serve the fajitas with tomatoes, sour cream, and salsa.
