This is a recipe that I created in order to achieve a crispier fried chicken.

Ingredients
- 2 - 2 1/2 lbs. Boneless, Skinless Chicken Breasts
- 2 - 3 eggs, beaten
- 2 Tbsp milk
- 1/2 cup Yellow Corn Meal
- 1/2 cup all-purpose flour
- 1 Tbsp paprika
- 1 tsp. garlic salt
- 2 Tbsp butter

Step 1
Preheat the oven to 400 degrees Fahrenheit. Rub the butter onto the bottom of a 9" x 13" baking dish or pan. In a glass dish, combine the eggs and milk and mix to combine. In a separate glass dish, combine the corn meal, flour, paprika, and garlic salt. Dip the chicken pieces in the egg mixture and then dip the chicken pieces in the corn meal mixture, coating both sides each time. Place the coated chicken pieces into the buttered baking dish or pan and bake for 50 - 80 minutes or until the chicken is no longer pink in the center.
