  • Glaze:
  • 1/4 cup butter, softened
  • 1/4 cup oil
  • 1/2 cup sugar
  • 1/3 cup brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 1/2 cups flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 3/4 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 3/4 teaspoon salt
  • 1 cup milk
  • 3 tablespoons butter, melted
  • 1 cup powdered sugar
  • 1 teaspoon vanilla
  • 2 tablespoons water

Step 1

With an electric mixer, cream together butter and sugars. Add eggs one at a time, beating after each addition. Add vanilla and beat until combined. In a separate bowl, combine flour, baking powder, baking soda, nutmeg, cinnamon, and salt. Turn the mixer on and gradually alternate flour mixture with milk until all are combined well. Line a 12 cup muffin tin with paper liners and spray the inside of the liners with nonstick spray. Evenly fill each muffin cup with batter, they will be filled almost to the top. Bake at 425 for 14-16 minutes or until a cake tester comes out clean. Allow to cool. For the glaze, whisk butter, powdered sugar, vanilla, and water in a shallow bowl. Dip each muffin top into glaze, allowing excess to drip off.
