Brussel Sprouts with Pancetta

Ingredients
- 1 lb brussels sprouts - trimmed and halved
- 1/2 lb. pancetta - chopped
- 4 shallots - thinly sliced
- 2 T. butter
- 1/2 lemon
- salt and pepper
- chicken stock

Preparation
Step 1
1. preheat oven to 425
2. heat oil over medium heat in a oven proof skillet- cook the pancetta until crisp - remove from pan onto paper towel
3. add shallots cook until soft
4. add sprouts - season with salt and pepper - cook until browned - add chicken stock if needed
5. put pan in oven and roast - add chicken stock as needed
6. take out when cooked through - add butter, lemon juice and pancetta
