Chipotle inspired burrito
This is pretty dang close to my favorite burrito that Chipotle sells. My family loves it and I'm sure you will too! It sounds time consuming but it seriously is not. I precook my meat in a crockpot and freeze the remaining meat to have on hand for days when I'm pressed for time. I have reduced the total prep time by buying store bought ingredients as well. If you don't already have one, spend the $4 at Walmart and get yourself a microwaveable tortilla warmer. It can be used for far more than tortilla warming. I use it to store muffins, cinnamon rolls, and reheating lunches for the kids.

Ingredients
- Sour cream
- Corn and black bean salsa (refer to my Mexican cookbook for recipe)
- Salsa (your favorite store bought will do)
- Honey Vinaigrette (store bought) marinated shredded lettuce
- White cheddar and jack shredded cheese (preferred but any blend will do)
- Chopped marinated chicken/beef (refer to my Mexican cookbook for recipe)
- Lime cilantro rice (refer to my Mexican cookbook for recipe)

Preparation
Step 1
Layer on warmed tortilla in order from bottom to top. Serve with chips and salsa.
