Spanish Ham and Cheese Sandwich (Bocadillo de Jamon Serrano y Manchego)

Bocadillos are different from U.S. deli style sandwiches in that bocadillos are not filled with lettuce or tomato, nor do they have dressings like mustard or mayonnaise. Bocadillos typically are made with crusty bread rolls, and whispery thin slices of Jamon Serrano, a traditional country air dried ham that boasts immense flavor and Manchego cheese.

Ingredients
- 4 artisan quality bread rolls
- 1/2 fresh tomato
- 4 very thin slices of jamon Serrano or jamon Iberico
- 2 oz. Manchego cheese, sliced very thinly

Preparation
Step 1
Slice each bread roll in half. Rub the inside surface of the bread roll with the tomato half, so that the tomato juice soaks into the bread. Place one slice of Jamon Serrano in each roll, and divide the cheese evenly between all four sandwiches.Top with remaining slice of bread.
