Ingredients
- 6 ounces tomato juice
- 3 tablespoons safflower oil
- 3 tablespoons cider vinegar
- 1 1/2 teaspoons grated onion
- 3/4 teaspoon crushed thyme leaves
- 1/2 teaspoon finely minced garlic
- 1/4 teaspoon hot red pepper sauce
- 1/2 cup chopped green pepper

Combine all ingredients together in a jar with a tight-fitting lid. Shake vigorously before serving over salad greens. Makes 1½ cups dressing.
