Entree, Chicken: Oprah's Penne with Sun-Dried Tomatoes & Chicken

Ingredients
- 1/4 cup sun-dried tomatoes
- 1/2 cup boiling water
- 6 oz skinless,boneless chicken
- 1/4 cup white wine
- 1 Tablespoon Italian seasoning
- 1 1/4 cup chopped mushrooms
- 1/2 cup frozen peas
- 8 oz Penne pasta
- 5 cloves of garlic, minced
- 12oz can evaporated skim milk
- 1/8 teaspoon nutmeg
- 1/8 teaspoon crushed red pepper
- 1/2 cup chopped fresh basil

Preparation
Step 1
1 Preheat oven to 350 degrees.
2 Put sun-dried tomatoes in a bowl and add boiling water. Set aside for a few minutes. Once hydrated and soft slice into thin strips
3 Cook pasta according to box directions.
4 Combine chicken and wine in a shallow dish and bake for 15 minutes. Remove chicken and shred in food processor reserving the juices in dish.
5 In saucepan put juices from chicken and add mushrooms, peas and sun-dried tomatoes. Saute over low heat for a few minutes until the liquid has been absorbed and the vegetables are wilted. Remove from pan.
6 In same pan, sprayed with cooking spray, put in garlic and flour then whisk in the evaporated milk. Add the nutmeg and red pepper; whisking constantly, bring the mixture to a boil for 5 minutes. Reduce heat to lowest setting and add basil.
7 Mix all ingredients together (including pasta) and serve.
