Ingredients

  • ½ cup whole almonds (can use any type of nut)
  • 1 ½ tsp. Superfine sugar
  • 1/3 cup flour
  • ½ cup and 2 tbs. potato starch
  • ½ cup and 2 tbs. icing sugar
  • 7 tbs. unsalted butter, softened
  • 1 large egg, lightly beaten (only ½ is needed)
  • 1/8 tsp. Almond extract
  • Chocolate hazelnut cream

Step 1

Heat oven to 325 degrees.
In a food processor grind almonds and sugar into a fine powder. In a bowl combine almond powder, flour, potato starch, icing sugar, butter, half of the egg and almond extract. Mix together into a dough, it will be dry and crumbly. Form into 60 balls and place on cookie sheets. Bake 18 – 20 minutes.
Remove cookies from oven, when cook spread bottom half with chocolate hazelnut cream. Use remaining halves to make sandwiches.
