Ingredients

  • 11 C chopped rhubarb
  • 3 C mashed black raspberries (could use a little less)
  • 1 C water
  • 5 C sugar
  • 1 lemon, zested and juiced
  • 1/3 C minced crystallized ginger
  • 1 tsp. ground ginger OR 1 T grated fresh ginger

Preparation

Step 1

Simmer rhubarb, raspberries and water over medium heat for 20 minutes. Add sugar, lemon juice & zest, and gingers. Bring to a boil; reduce heat and simmer 45-55 minutes. Test for gel. Process in hot water bath for 10 minutes.
