Ingredients
- 4 (6 to 8 ounce) mahi mahi fillets
- 1 tablespoon olive oil
- 3/4 teaspoon salt, divided
- 3/4 teaspoon ground black peper, divided
- 1/4 cup dry white wine
- 2 shallots, minced
- 2 cups heavy whipping cream
- 1/2 cup butter
- 1 tablespoon orange juice
- 1/2 teaspoon dried thyme

Step 1
1) Spray grill rack with nonstick nonflammmable cooking spray. Preheat grill to medium-high heat (350 to 400 degrees)
2) Brush mahi mahi fillets with oil. Sprinkle with 1/2 teaspoon salt and 1/2 teaspoon pepper. Grill, covered with grill lid, for 3 to 4 minutes per side or until fish flakes easily when tested with a fork.
3) In a small saucepan, combine wine and shallots; bring to a boil over medium-high heat. Boil until reduced to tablespoons; strain discarding solids. Return reduced wine to pan. Whisk in cream and cook for 5 minutes. Whisk in butter, orange juice, thyme, remaining 1/4 teaspoon salt, and remaining 1/4 teaspoon pepper.
Server sauce over fish.
