Ingredients
- 1 20 oz. can sliced pineapple
- ¼ cup butter
- 2/3 cup firmly packed ark brown sugar
- 16 walnut halves
- 1 ¼ cups sifted flour
- 1 ½ tsp. baking powder
- ¼ tsp. ground ginger
- ¼ tsp. salt
- 1/3 cup butter, at room temperature
- 2/3 cup sugar
- 1 egg
- 1 tsp. vanilla
- 2/3 cup pineapple juice

Step 1
Drain the pineapple juice and reserve 2/3 cup of juice. Over low heat melt ¼ cup of butter. Sprinkle the brown sugar over the butter and spread evenly over the bottom of a 9 inch Pyrex pan. Arrange 8 slices of pineapple over the sugar, fill the centers with the nuts.
Sift together the flour and spices. Beat the butter until creamy, add the sugar, and beat until fluffy. Beat in the egg and vanilla. Add the dry ingredients, alternately with the juice. Beat until smooth and bake 45 minutes.
