Perfect Peppermint Patties

Ingredients
- 1 LB confectioners' sugar
- 3 TBS butter, softened
- 2-3 tsp. peppermint extract
- 1/2 tsp vanilla extract
- 1/4 cup evaporated milk
- 2 cups (12oz) semisweet chocolate chips
- 2 TBS shorting

Preparation
Step 1
In a bowl, combine first four ingredients. Add milk and mix well. Roll into 1 inch balls (I use the small end of a melon baller ). Place on waxed paper lined try. Flatten with finger. Freeze
Melt chocolate in micro wave safe bowl. Dip frozen patty into chocolate and place on waxed paper tray to cool. Store in air tight container.
