Sausage Stuffed Zucchini

Ingredients
- 8 zucchini
- 1 # Italian sweet sausage
- 1 large onion chopped
- 1/4 C chopped parsley
- 1 tsp leaf basil
- 1/2 tsp. Salt
- 1/4 tsp. Pepper
- 1/2 C. Grated Parmesan
- 1/2 c. Packaged bread crumbs
- 2 eggs slightly beaten

Step 1
Halve zucchini lengthwise. Parbroil in lightly salted water until barely tender. Drain, scoop out leaving shell of about ¼”. Chop scooped out portion very finely.
Remove casings from sausage, cook slowly, without browning, breaking it up as it cooks until no pink remains. Stir in onion, parsley, basil, salt, pepper, Cook. Stir occasionally until onion is tender.
Remove from heat, stir in chopped zucchini, parmesan, bread crumbs and eggs, mixing well. Fill shells with mixture, dividing equally and mounding slightly. Arrange shells close together in oblong pan. Bake at 350 for 30 minutes until mixture is hot and slightly browned.
