Ingredients
- 3 Tbls Red Wine Vinegar
- 2 Tsp Dijon Mustard
- 1/2 Tsp Salt
- 1/2 Tsp Black Pepper
- 1/2 C Olive Oil
- 3 Ripe Pears-peeled, cored and cut into 16 wedges
- 1 Wedge Parmesean Cheese
- 2 Small heads Ridiccio (cored & Torn)
- 2 Small Heads Belgian Endive
- 2 Small Heads Arugula
- 1/2 C Pecans (Toasted and Chopped)

Preparation
Step 1
Prepare dressing - Wisk vinager, mustard, salt and pepper, then wisk in oil until well blended. Add pears and toss to coat.
Shave Cheese with a veggie pealer in large pieces for 1 cup.
Add lettuce to pears toss - top with parmesean and pecans
