Ingredients
- 2 tblspn sugar
- 2 tspn ground sage
- 2 tspn dried marjoram, crushed
- 1 tspn salt
- 1/2 tspn celery seed
- 1/2 tspn dry mustard
- 1/8 tspn pepper
- 1 5pounds boneless pork loin roast
- 1 tblspn snipped parsley

Preparation
Step 1
In a small bowl combine sugar, sage, marjoram, salt, celery seed, mustard, and pepper. Thoroughly rub the roast with sugar mixture. Cover; let stand 4 hours or overnight in refrigerator.
Set meat on rack in shallow roasting pan. Insert meat thermometer. Roast, uncovered, in a 325 degree oven for 2-1/2 to 3 hours or until thermometer registers 170 degrees.
To serve, reserve 1/3 of the roast for pork in mushroom sauce. Top the remaining roast with parsley.
