Ingredients
- ● 1/2 medium onion , chopped, fine
- ● 6 tbsp margarine
- ● 8 tbsp flour, (1/2 cup)
- ● 4 cups 2% milk, (1 quart)
- ● 1 bunch broccoli, stems, leaves removed
- ● 1 cup chicken broth, can use water if needed
- ● 8 slices american cheese
- ● taste salt and pepper

Step 1
1. In large pot over medium heat, cook onions in margarine til soft
2. Stir in flour and cook (do not brown) for 1 minute, stirring frequently
3. Whisk in milk, reduce heat and stir occasionally.
4. Meanwhile, chop broccoli into small pieces, place in small saucepan with broth and bring to boil over medium-high heat. Reduce heat to med-low, cover and simmer til tender (about 6-8 minutes)
5. As milk mixture thickens, stir in cheese slices and season with salt and pepper.
6. When broccoli is tender, add it (including the liquid) to the thickened cheese mixture. Stir well to combine.
7. Serve immediately
