BAKING CHICKEN IN CAST IRON

I saw this method of baking chicken on a cooking show , tried it and it is really good and brown.

This was for a whole chicken, but I have used it for pieces of chicken and it all is great.
whole chicken - cut it down the back bone and open it up - looks like a butterfly, so it is called that.
Pieces can be cut and done the same way. We like drum sticks and that is so good.
In a cast iron skillet - heat the skillet up on a hot stove burner.
Add a 1/2 cup of oil, for a 12" skillet. While the skillet is heating up season the chicken.
When the skillet is hot - carefully put the chicken in the skillet.
Brown all sides - by turning as it browns.
Preheat oven to 400, and when the chicken is nice and brown, put the whole skillet into the
oven. This will continue to bake and will be about 45 minute to an hour. Whole is longer bake time. Watch it and take is out of the oven and let it sit for a few minutes and then enjoy.
