Appetizer: Cherry and Nectarine Bruschetta

Ingredients

  • 2 nectarines (or red plums), halved, thinly sliced
  • 1 cup cherries, pitted, halved
  • 2 tbs. sugar
  • 1 tbs. olive oil
  • sea salt
  • 1/4 vanilla bean, split lengthwise or 1/2 tsp. vanilla extract
  • 1 cup ricotta
  • 1/2 baguette, sliced, toasted

Preparation

Step 1

Combine fruit and 1 tbs. sugar, 1 tbs. oil and pinch of salt. Scrape in seeds from vanilla. Macerate 10-15 minutes.

Whisk ricotta and sugar.

Drizzle toast with oil, top with ricotta and fruit. Drizzle juice from fruit and more olive oil. sprinkle with salt.
