nectarines (or red plums), halved, thinly sliced
cup cherries, pitted, halved
tbs. olive oil
vanilla bean, split lengthwise or ½ tsp. vanilla extract
baguette, sliced, toasted
Combine fruit and 1 tbs. sugar, 1 tbs. oil and pinch of salt. Scrape in seeds from vanilla. Macerate 10-15 minutes. Whisk ricotta and sugar. Drizzle toast with oil, top with ricotta and fruit. Drizzle juice from fruit and more olive oil. sprinkle with salt.
