Ingredients
- 2 nectarines (or red plums), halved, thinly sliced
- 1 cup cherries, pitted, halved
- 2 tbs. sugar
- 1 tbs. olive oil
- sea salt
- 1/4 vanilla bean, split lengthwise or 1/2 tsp. vanilla extract
- 1 cup ricotta
- 1/2 baguette, sliced, toasted

Preparation
Step 1
Combine fruit and 1 tbs. sugar, 1 tbs. oil and pinch of salt. Scrape in seeds from vanilla. Macerate 10-15 minutes.
Whisk ricotta and sugar.
Drizzle toast with oil, top with ricotta and fruit. Drizzle juice from fruit and more olive oil. sprinkle with salt.
