Ingredients

  • 7 largeonions, ground (4 cups)
  • 1 medium cabbage, ground (4 cups)
  • 10 green tomatoes, ground (4 cups)
  • 12 green peppers, ground (5 cups)
  • 6 sweet red peppers, ground (1 1/2 cups)
  • 1/2 cup granulated pickling salt
  • 6 cups sugar
  • 1 tbsp. celery seed
  • 1 1/2 tap. tumeric
  • 2 tbsp. mustard seed
  • 2 cups water
  • 4 cups cider vinegar

Preparation

Step 1

Wash vegetables to be used. Grind and measure first five ingredients. Use a coarse blade for grinding. Mix ground vegetables. Sprinkle with 1/2 cup salt and stir. Let stand overnight in a cool placce. Rinse and drain. Add all additional ingredients. Stir. Bring to a boil. Boil gently for 5 minutes. Fill hot jars to 1/2 inch of top. Adjust lids. Process in boiling bath for 5 minutes. Start timing when water returns to a boil. Makes 9 pints.
