Ingredients

  • ¾ cup butter, softened
  • ¾ cup brown sugar
  • 1/8 tsp. salt
  • 1 ½ cups flour
  • 1 cup toasted nuts
  • 2 eggs
  • 2 tsp. instant coffee
  • ¼ tsp. salt
  • ½ cup sugar
  • ½ cup packed brown sugar
  • ½ cup Kahula
  • 1/3 cup flour
  • 1 tsp. baking powder
  • 1 cup flaked coconut
  • 2 tbs. additional Kahula
  • Icing Sugar

Step 1

Preheat oven to 350 degrees. Grease a 9 x 13 inch pan. Combine butter, sugar, and salt. Mix until light and fluffy, add flour ½ cup at a time, blending well after each addition. Stir in nuts and spread evenly over bottom of pan. Bake 12 minutes.

Beat eggs, coffee, and salt until fluffy and light. Beating continually at medium high speed, add sugars ¼ cup at a time, beating well after each addition. Continue beating until thick and pale and ribbons form in the bowl, 5 – 10 minutes. Slowly add ½ cup Kahula, then add the flour and baking powder until the mix is combined. Fold in coconut. Pour evenly over the partially baked crust. Bake 20 minutes. Drizzle with remaining 2 tbs. Kahula and return to the oven to bake 5 minutes until the top is set and browned. Dust with icing sugar.
